Open House's foods

We had open house at my place on Christmas eve for my dad's 61st birthday. Food catered from Country Court 2 1/2 mile, Rock road. They gave us free cheesecake for the order. Minimum to cater is 30 pax. Price per pax started from RM16. My aunt also make her awesome longitive pao or Show Tao Pao with lotus paste, the highlight of the night!!! Gone in minute, everyone wants it, so yummylicious! We had fried Tom Yam rice, fried mee, Tofu with sauces, Roasted chicken, roasted duck and Meat rolls, (Ngo Hiang Bak) and Watermelon slices. Tom Yang fried rice and Meat roll were ymmmy though, the rest just standard-ly good.
On to the pichasssssss

Cranberry Orange oatmeal muffins

Recipe from Allrecipes.com

Ingredients

* 1 cup rolled oats
* 1/2 cup orange juice
* 1/2 cup boiling water
* 1/2 cup butter
* 1/2 cup packed brown sugar
* 1/3 cup white sugar
* 2 eggs, lightly beaten
* 1 cup all-purpose flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 3/4 teaspoon salt
* 1/4 teaspoon ground nutmeg
* 1 teaspoon vanilla extract
* 1 cup raisins (optional)

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease or paper-line muffin pans.
2. In a small bowl soak oats in orange juice and water for 15 minutes.
3. In a large bowl cream together butter or margarine and sugars. Beat in eggs and oat mixture.
4. In a separate bowl, blend flour, baking powder, soda, salt, and nutmeg. Stir into batter. Stir in vanilla and raisins. Spoon batter into prepared muffin pans, filling 2/3 full.
5. Bake at 350 degrees F (175 degrees C) until golden brown, about 20 minutes.

I altered it to my version, less sugar, less butter, it turned out just fine, a little on the sweet side because i forget the orange juice i used has sugar in it. Reduced 1 Tbsp less of sugar should turn out perfect. I only have quick oats so you can skip soaking them in the boiling water since they cook pretty quick. I use the boiling water to soak the dried cranberries instead. Make 12 medium sized muffins.

My version:

1 cup flour
2/3 cup quick oats
2/3 cup dries cranberry (Or any other dried fruits like raisin or red date)
1/4 cup orange juice
1/4 cup boiling water
1 egg
1 Tbsp orange zest
3 Tbsp butter
3 Tbsp brown sugar or white sugar ( Reduced from 4 Tbsp because it was too sweet!)
1/2 tsp baking powder
1/3 tsp baking soda
1/3 tsp salt

Nooooo Tuttle-neck not to meant to wear in Malaysia

Wearing a tuttleneck on a hot humid weather is soooo not a good idea, i should knew it better...i had a appointment today and i need something long enough to cover my bottom area, so i pick my black wool tuttleneck top. It was okay at first when i was in the office, but then i need to run some errands so i was outside for an hour wearing this top, it drives me crazy...so annoying...my neck feel like so uncomfortably warm...damn...i should have been wearing something more weather appropriate...haha when you are living in a humid country...the play up of clothes is always so limited...accept the fact...Judy !!!

Clothing haul

Another clothing haul from the States, some tanks and dressy tops...I wont be buying anymore clothes like a year later? Maybe...so broke...ordered from urbanoutfitters.com. They shipped to Malaysia, flat rate USD35, the clothes there not for everyone, but the quality is excellent, no complaint!!!

Failed Peanut butter oatmeal cookies!!!

Failed PB n oatmeal cookies, but taste wise? Turned out it was good, crispy like, I called it PB n Oatmeal crisp?? Kudo huh?? Reason was because we don't have extra pans to bake them, so I portion them in a larger size and I tried to reduce the amount of butter and then it was too big and not enough fat to go flat like cookies. Duuhhh lesson..lesson...learnt!
So, there....the big chuck of peanut butter and oatmeal scone-like cookies?? I called it crisp because cookies suppose to be flat and round!!! It's taste great though..even there are some burnt at the edge...it was a little pain to eat because its tend to fall all over the place...cos there is not much flour and butter to hold the dough together...the amount of quick oats use in this recipe is more than flour. So it's very healthy ...the flaky-ness didnt bothered me cos oat is good stuffs!!!

3 minutes creamy chicken soup with pork meat balls and black fungus

So, my dad wont tapao for me anymore, cos i always don't eat. But i just feel hungry at 2pm so i checked out on my fridge to see whats good to eat, sad...we have nothing!!!...Except the leftover roasted chicken breast, some cheese slices, pork meat ball and black fungus. So, out of no where...i want a creamy chicken soup, cos i saw cheese and i want something hot and cheesy...so...i fully utilizing my creation to come out with something eatable...and, there is creamy chicken soup...It's so easy...just takes me like few minutes including the microwave time...all you needs is just chop everything and dump in a cup and microwave...in this case, scissor is your good friend....ta-daaaa...good to eat!!! Here's the instructions!!

You needs:-
- Chicken stocks 3/4 TSP, more or less than suits your taste bud
- Hot water 400 ml
- Meat balls, as many as you likes!!!(In case it frozed like a guli-ball, run them under water and cut them in halve with scissor...did i mentioned how good is the use of scissor here???)
- Some chicken breast or any leftover lean meat, cut in cube
- Black fungus or seaweed (Just something chewy to add some texture to the soup)
- Shallot flakes and oil (Basically just oil we saved after frying the shallot)
- Cheese slice, 1 piece. (Sandwich cheese is good enough!)

Instructions:-
Fills your cup with the hot water, add in chicken stocks, cut in your meat balls, chicken cubes and black fungus. microwave for 2 1/2 minutes or when you smells the meat balls is cooked. Pop in the cheese slices and topped with shallot flakes and oil, viola...set to eat!!!

Ehhh...the soup looks kinda milky ehh...should i just called it milky chicken soup?? Adding cheese slice into a clear base soup really make the soup taste yummer IMHO!!! Try it!!!

Purple and Red OOTD

I just being boring, i love red striped tank paired with cardigan, my last OOTD with the striped tank paired with black long cardigan and skinny denim jeans. I being un-creative and copy the styles with purple ruffles cardigan and black shorts, i added an ivory color string as a belt though, kudo for my effort haha.. it was a cheapie free from a shorts i bought back then. As least i play with the color a bit...purple and red..hmmm....not a bad color combo ehh??

Curry puffs from Bintulu

Whenever my aunt from Bintulu came to Kuching, she always brought the famous curry puffs for us. I am not a big fan of curry puffs, but my dad love it...so my aunt brought like over 100 of them for my dad and distributes them to other uncles and aunties. She bought them in frozen so that you just deep fried them or bake them when you wants to eat. We always bake it since its healthier. The curry puffs filled mostly with potatoes, i don't remember if it had meat on it...but if it does, it doesnt have many. Its kinda spicier but in a sweet way?? Haaha..spicy but sweet at the same time because it might have something to do with the sweetness in the potato or the dough?? Hmmm...i will have to eat more to figure it out. Sorry guys...i am on carbs ban...i know..not fun!!!

See..how many boxes of curry puffs my dad stock up the goodies for himself...half of them gone to his tummy oredy...haha
